Cold tomato soup

Recipe

Mix a CuisipakTM of Canton® Tomato & Pesto soup with 1 cup (250 ml) plain yogurt, 1 teaspoon (5 ml) lemon juice, 1 tbsp. (15 ml) finely chopped fresh basil and, if desired, 1 small, finely chopped garlic clove. Salt and pepper to taste.

Refrigerate for at least 1 hour. When serving, garnish with fresh basil leaves and flowers and a spoonful of yogurt. Accompany with tarales (a type of Italian pretzel) or crackers.

Makes 2 to 3 servings.

Appetizer: Canton® Tomato & Pesto soup served with crackers

Main dish: Chicken brochette with vegetables (diced chicken breast, mushrooms, white onions and peppers)

Side dish: Rice or couscous, green salad

Dessert: Pineapple parfait (In transparent cups, alternate layers of fresh or canned pineapple cubes, cottage cheese, honey and coconut flakes. Top it off with a touch of cottage cheese sprinkled with honey and garnish with mint leaves.)


Tips and tricks

When serving the soup, don't hesitate to experiment with different garnishes.

  • Drizzle with extra-virgin olive oil and a few drops of lemon juice.
  • Sprinkle chopped fresh basil.
  • Add freshly grated or shaved Parmesan.
